I recently had the delightfully fun opportunity to chat with Chef Mark Tafoya, director of the Culinary Media Network and host of The ReMARKable Palate podcast radio show. Mark, who is also a personal chef in New York City, loves travel and has a deep appreciating of culinary history—which is what led him to invite me to be on his show.
